Lion’s Mane Mushrooms

Lion’s mane mushrooms (Hericium erinaceus) are large, white, shaggy fungi that resemble a lion’s mane as they grow.  These mushrooms are also commonly referred to as yamabushitake, bearded tooth fungus, or bearded hedgehog. Lion’s main mushrooms tend to grow in a single clump with dangling spines longer than 1⁄2 inch and are can used for culinary or medicinal purposes.
